Perfectly Pumpkin Pancakes

Well good morning!  You may well be thinking, another pancakes recipe?  Is this the only thing she knows how to cook?  As far as I'm concerned, Saturday mornings must always have pancakes.  Each and every Saturday, I find the perfect seasonal recipe to start the day right and spice up the weekend.

Pumpkin pancakes taste like something that would be served on a cool October morning at Hogwarts, prepping the wizards for a busy day of witchcraft---which is to say, they are cinnamony, gingery, pumpkiny and perfectly delicious.  Perfect for a prelude to apple-picking or perhaps before carving your jack-o-lantern, these will become a favorite in your house all autumn long.  Enjoy!
 Ingredients
  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 3 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
Directions
  1. In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, sugar, baking powder, baking soda, pumpkin pie spice and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
  2. Heat a lightly oiled griddle over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.  Makes about 12 medium size pancakes (which is enough in my house to serve one ravenous hubby, one slightly less ravenous me and a bottomless pit toddler).

    My hubby and little ones enjoyed it.
    A taste of fall now that school has started.
