The Mythical Cookie

Chocolate chip cookie recipes are closely guarded by grandmas the world over.  Bakers like to keep their favorite close to their heart only to be prepared when needing extra-special culinary oooohhhhs and aaaahhhs from family and friends. 

So, it's no surprise that one of the most famous chocolate chip cookies comes with a fable. You may have heard the urban legend about Neiman Marcus' notorious $250 chocolate chip cookies.  Well, it is no longer necessary to rack up a tab on your Neiman account just to get your hands on the delish cookie recipe.  In fact, they've posted the recipe on their website
As a Toll House cookie purist, I wasn't sure about this process which called for baking at a very low temperature for a long time.  But, these cookies were hubby-approved!  Cakey in the middle and crisp on the edges, the cookies have the perfect texture.  The espresso powder does not lend a coffee flavor, rather just enhances the chocolate and makes the cookies extra decadent.

    I'll have to try these. I remember reading in Joy of Cooking how the Toll House cookie originated. There was a sugar cookie with both brown and white sugar at the Toll House restaurant and somehow bits of broken chocolate fell in the dough. The chocolate pieces did not melt and the result was divine!
    So from happy accidents . . .
