Dinner Time

If you are what you eat and I am eating a tart....well, you do the math. This Thursday, as almost every other, my hubby has his "man-date" with his best-bud. Rather than sitting at home and eating my single girl dinner of cheerios and chardonnay, I decided to make myself something civilized and scrumptious. And, what, my dears, could be more civilized that a savory tart?

Caramelized Onion and Pancetta Tart

Ingredients:
  • 1 pie crust, baked & cooled
  • 2 yellow onions
  • 1/2 cup of diced pancetta
  • 1-2 cloves of crushed garlic
  • 5 eggs
  • 1/2 cup cream
  • 1/2 cup of Parmesan
  • 6 asparagus
  • 5 cherry tomatoes
Steps:
  1. Preheat oven to 350.
  2. Add pancetta to saute pan and cook until fat renders.
  3. Cook onions with pancetta. Add salt and pepper to taste. Cook until slightly caramelized, add garlic near the end of the cooking process. Remove from heat and allow to cool to room temperature.
  4. In a mixing bowl, whisk eggs with cream and Parmesan.
  5. Pour onion mixture into baked and cooled pie crust (in tart pan). Cover with egg mixture.
  6. Arrange top with asparagus and tomatoes (or other of your favorite veggies).
  7. Bake for 35-40 minutes or until the filling is set and puffed.

  1. I'm inspired by your savory tart. No asparagus in the fridge, so I'm substituting yellow peppers in your pinwheel design. Yum!
