Dinner Time (sort of)

It is is a truth universally acknowledged (forgive me Jane Austen) that bacon can cure any woes, even the most extreme case of the Mondays.
Scrambled eggs with salsa, buttermilk-banana hotcakes & maple bacon
After an especially bad day, I needed comfort food tonight.  And in my world, there is nothing more comfy than breakfast for dinner!
Try it, I dare you.  I defy you to be snarky when smelling eau de bacon and forking fluffy buttermilk pancakes.  Just try to keep that pout on your face as you slurp maple syrup or cradle cheesy eggs into your mouth.

So, dine in your p.j.s!  I won't tell a soul.  Treat yourself to breakfast for dinner and it will be Saturday in no time.

Recipes featured: I always make Better Homes and Gardens tried and true buttermilk pancakes (try the sour milk substitute of 1 tablespoon white vinegar in glass measure then fill with milk to one cup line---instead of keeping buttermilk on hand).

Ina's roasted bacon is also one of my all-time favorites.
